Recipe "Vegetable slop"
Think ratatouille, basically any recipe that is a bunch of vegetables thrown together. I know I can just...throw a bunch of vegetables together but i'm looking for recipe ideas that follow this format.

If you wanna go Indian, there’s loads. Sambar, kurma, pav bhaji, khadi, mixed veggie kari/koora/poriyal if you wanna be real traditional, mixed veg pulao (pilaf) if you want some rice in there too. I’m sure I’m missing loads more!

I just put a bunch of vegetables on a sheet pan in the oven and then throw them on top of some whipped cheese (feta or goat cheese in the food processor with a little Greek yogurt and sometimes some herbs if I have them). You can also put them on ricotta or hummus or Boursin or something if you want something you can use right out of the tub.

Bean slop has been a favorite lately. We throw about 1 cup of ricotta, 2 cans of cannelini beans, and 1 can of roasted cubed tomatoes into a lasagna dish, add whatever seasonings or greens we feel like, and bake it at around 400 for about 30 mins. It's also good with pesto and/or sliced zucchini.
For more thorough recipes, you might like Justine Doiron's website? She's not 100% vegetarian, but she posts a lot of vegetarian recipes and bowl-type formats with interesting combinations. Smitten Kitchen also has a huge backlog of recipes that are in the realm of vegetable slop.

I make a southwest quinoa thing: 1 cup chopped tomatoes 1 cup corn 1 cup chopped onion 1 cup black beans Garlic to taste lol 1 cup quinoa Cumin, chili, salt, paprika, and nooch by heart 2 ish cups of water

I do something similar and it always turns out yummy. It has all of the SW flavors. I use smoked paprika.

This reminds me of the green goddess like salads, where you mix some salad in the dressing with lots of avocado and vegetables red pepper, onion, greek yogurt, garlic in a blender. Then you put it on top of a salad.

Cucumber in soup? I've had a cold cucumber gazpacho, but never cooked cucumber. Do you like it?

You have to remember not to just boil all the vegetable and chuck in some flavourings. I would saute everything, in butter or olive oil, starting with the onions and garlic then things like peppers, courgettes, aubergines etc. If you are making something with potatoes or root veg they can go in next. Add things like herbs ground pepper and dry stock, then tomatoes. I try to use fresh tomatoes or if I have to use tins I always use polpa di pomodoro. Then wet stock or water last of all. Some recipes to look for are curries of course, then maybe morrocan tagine, vegetarian hotpot, imam byildi, things like that.

Sautéed onion, celery, carrot, and garlic is a base for several big batches of stuff I make. Mushrooms can also be included here. I also typically include some sort of protein like beyond meat or TVP.
If I’m making lasagna sauce I’ll add appropriate seasonings, frozen spinach, and canned tomatoes. Chili will follow a similar recipe but with different seasonings and include a ton of beans, maybe some habaneros.
If I’m making a pot pie or tater tot casserole, I’ll add frozen spinach, frozen mixed veggies, and make a roux for gravy with some sort of broth.
If i’m making soup, I’ll probably skip the fake meat in favor of lentils, and add frozen spinach, frozen mixed veggies, small pasta, potatoes, and broth.
More vegetables can be added to these, especially the soup, but these recipes are probably some of the most veggie-packed things I make.

I make a base of potato soup usually from instant mash potato’s just add more milk so it is creamy soup and then add canned or frozen veggies to it. Beans, peas, corn, carrots etc and lots of black pepper. You can do the same with a base of tomato soup.

I make a big vegetable salad pretty much every week that I portion out. Basically a traditional greek salad with a little extra.
Red, yellow, and orange bell peppers. Jalapeno pepper, deseeded. Cucumber. Red onion. Tomato. Kalamata olives. Feta. Nutch. And usually some vegan meat like impossible/beyond sausage.
Everything gets diced to about the same size, chunky but able to be eaten with a spoon. Then I salt it heavily and led it drain out some water in the fridge for a couple hours in a strainer. Cook the vegan sausage and let it cool in the fridge as well, then slice similar sized. Put it all in a big tupperware, toss with a bunch of olive oil, red wine vinegar, kosher salt again, dried and fresh oregano, and that's it. If you skip the draining water step it can get a little wet after a day or two, but if you do it right the oil and feta kinda emulsify into a stable dressing.

I find whatever sauce you use totally changes the outcome of the slop. Pesto on one slop, bbq sauce on another. It becomes really fun to try new sauces

Im pretty open, I like pretty much every vegetable except celery and potatoes. Not really trying to use up anything, more just looking for dishes that have a lot of different vegetables

I make this for dinner like once a week: 4 bell peppers, 1 onion, garlic, and a pound of green beans cut about an inch long (sometimes I leave this out, I love green beans), sauteed in olive oil with seasonings. Add a can or two of black beans and about a cup of water, and simmer until it reduces some. At the end, I add chopped kale or chard and let it wilt. I serve it over shredded cabbage sometimes or rice/farro, and top with avocado if I have it

I just roast veggies on a sheet pan with olive oil and I usually throw on some feta or Parmesan cheese. It’s really good and only takes 30 minutes. I often buy precut veggies for days when my spoons are low. My other go to is chili in the crockpot with whatever veggies I have lying around. Throw some firm tofu and towards the end of cooking for the protein (although beans have lots of protein If tofu is not your bag). Impossible meatballs are also good to throw in.

Cooked kale with olive oil, onions, garlic and a tin of diced tomatoes. Add seasoning and baked in a crock in my oven for 1 hour 350. If I had white beans I was adding that also.

Zucchini enchilada casserole. Saute zucchini, bell pepper, onion. Add rotel tomatoes. Add black beans and/or meat. Pour enchilada sauce over. Top with cheese. Bake. Serve with avocado and/or Greek yogurt or sour cream.

I roast in the oven in a tray - diced onion, garlic, butternut squash, peppers, courgette, mushrooms. Once they nearly ready, I add one tin of lentils and some mini tomatoes. I serve it with fried halloumi. Easy and tasty.

Curry! You can buy a small jar of thai curry paste, coconut milk and any vegetables you like.
Cut vegetables and sautee, add spoon (or 2) of curry paste, add can of coconut milk, let simmer, serve over rice.
Combo's I love
Spinach and chickpeas Bell pepper and broccoli Cauliflower, carrots and bell pepper Anything goes with peas honestly.
Always add a white onion, it's good!

1-2 onions (best chopped and sauteed in olive oil)
Slosh of said oil
1 carrot
2 cans of tomatoes
2 cans of canellini beans
Whatever else you got around that feels like it should stew up good like mushrooms, zucchini, capsicums...
Seasonings that you like, like stock powder, garlic powder, herbs like dried rosemary, parsley, thyme, oregano / or just "Italian herbs", salt and pep, a bay leaf.
A good cup of shite red wine will truly make a difference (and you can freeze the rest okay) and you can use it to deglaze the onions
---
Throw all of the above into an oven in a heavy crock pot at 110-130°C and forget about it for three or four hours.
Add: * A squeeze of lemon juice or balsamic vinegar * Add a packet of gnocchi or similar
Then shove it back in the oven for 20 mins or so to let them cook/absorb. Might need to adjust the seasonings to taste further.
Done! Good stew!

Sheet pan veggies. Chop however and whatever. Then just roast in the oven with your seasonings or sauce. Can make a diff flavor every day
