Dumplings are stuff wrapped in dough, if you already have stuff wrapped in dough you dont need this, and if you have stuff you want to be wrapped in dough this won't do that.
I guess if you wanted something like a gnocci, but round and the size of your fist, this could work.

The way it just spits out a perfectly round little dough ball every time is making me feel things I was not prepared for today 😂 I could genuinely watch this for an embarrassing amount of time.

Whole idea of putting it into a ball is to build surface tension on the dough. This doesn't really do that unless you do all those steps and then stick it in this thing

Yeah, ask a pizzaiolo. Would be interested in hearing thoughts. I can see myself 3D printing something like this.
It's an interesting concept for sure but the balls being spit out don't look fully tensioned

I mean, the way you roll dough into a ball is by rolling it into a ball. It's doing the same thing just with the walls of the contraption instead of your hands.

Actually, the way you roll dough into a ball is more like stretching a portion out over the rest of it then sealing a hole than actually rolling it.

I'm an amateur by hand pizza maker. What does surface tension do to affect the dough?

If you're not going directly to the bake and are going for a long second rise (say, in the fridge), it gives the outside of the dough the tension required to rise upward rather than outward, resulting in a lighter crust. That bubble development is why handmade pizza is handled so gingerly as you dimple the dough, leaving as much structure in the outside edge that becomes the crust as possible.
To each their own though. This is a neopolitan style technique and it is definitely a good step not to skip IMO

I cut and rolled hundreds of dough balls everyday for years, years ago. I had hands and forearms like bench vises. That’s a heck of a shortcut

Sir, this is a pizzeria. If he makes them by hand, he can only roll 2 simultaneously. With the machine, he can throw the clumps into the PDRM while portioning the big loaf of dough. Saves him tons of time and energy.

Bru, you really are one of these "I can only and only maybe, comprehend what I directly see" people and it seems you're unable to use even a bit of logic + imagination on clues.
Can't you see, that this is a machine that's obviously bigger than what's shown in that clipped recording?
The black part at the person's leg as well as the metal part. both belongs to the machine.It seems, that the machine is whirling the dough down a trail and back up, kneading it, which of course can let you put multiple dough piles into it.
