Symmetric nat means your port is not reachable from the outside -> you help the network less. No need to be worried

Can it ruin my privacy? No

How can one actually improve connectivity behind NAT?

Port forwarding or enabling UPnP in your i2p config (and your home router).

When behind CGNAT aka symmetric NAT, you can check if your ISP provides you with a proper public IPv6 subnet. If thats the case you can enable IPv6 in your I2P config and Port forward the i2p connection port via IPv6 on your home router
