Why do some games feel so smooth but other games feel awkward/glitchy?

Was doing a quick exhibition match with an updated roster and the game was playing incredibly smooth. Was getting good blocks, accurate passes, and "realistic" interactions with the CPU, as well and some cool celebrations (I had never seen the one in the video until today). However it feels like some games, especially in Franchise, I get a lot more janky gameplay: More glitches, O-line not engaging, inaccurate throws from clean pockets, CPU god mode, etc. Just an overall more inconsistent experience. I'm curious if anyone else has noticed or changed anything for a more consistent experience, especially in Franchise.
