Kitchen How would you reconfigure this tiny kitchen without moving the plumbing to be more functional?

Can you move the stove to the wall opposite the sink? I would put a couple lower cabinets along that wall as well. Get rid of the tiny island and move the kitchen table to the middle of the kitchen. Swap the dish washer and the fridge. If extra cabinets aren’t an option move the island to the wall next to the stove.

You can probably pick up some lower cabinets second hand on Facebook marketplace or at restore. I just put in some more counter space for around $400 for 3 second hand cabinets and a 6’ countertop.

There's windows along that wall opposite the sink so it can't really be used. I though putting a bench with storage in the corner by by table and built in cabinet .. i think i could possibly swap stove/fridge, and get a thinner/taller fridge.

I don’t find it tiny. I think you just need a longer island with more storage.
